Papaya is a healthy tropical fruit. It is full of digestive enzymes. Enjoy delicious garlicky raw papaya as a Salad or as a Chutney.
Ingredients
A small papaya or half of a big one
1/2 tsp turmeric
salt to taste
handful of cilantro/coriander leaves
1/2 lemon
2 garlic cloves
2 green chilies
1 tsp jaggery or honey or brown sugar
For Tempering
1 tsp ghee or oil
1/8 tsp fenugreek seeds
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp paprika
a pinch of hing/asafoetida

Preparation
Wash and peel the papaya. Grate or shred it with a cheese grater.
Make a rough paste with garlic and green chili.

Procedure
Take the grated or shredded papaya into a bowl. To this add salt, turmeric powder, lemon juice, garlic green chili paste, cilantro, and jaggery. Mix them well. Adjust salt, jaggery and green chili according to your taste. If you want it as a salad, this will be your papaya salad. But if you want it as a chutney, make tempering/seasoning.
Tempering(optional)
Take 1 tsp of ghee or oil in a small sauce pan which is on medium heat. When the ghee is hot, add fenugreek seeds, mustard seeds, and cumin seeds. Allow the mustard seeds to crackle. Then add paprika, hing and curry leaves. Switch off the flame and add this tempering to papaya salad. Mix it well. Papaya raw chutney is ready. Try this recipe and enjoy green papaya salad/chutney.
