Raw Papaya Curry with Tomato and Methi

Papaya curry with tomato and methi is a very delicious and healthy recipe.
Ingredients
2 cups of raw or green papaya pieces.
1 onion
2 tomatoes
3or more green chilies
1 bunch or a handful of fenugreek leaves
1 tsp ginger garlic paste
1 tsp coriander and cumin powder
1/4 tsp turmeric powder
1/4 cup of chopped cilantro
Salt to taste
1 tsp ghee(optional)
For Tempering
1 tbsp oil
1 tsp chana dal
1 tsp urad dal
1/4 tsp fenugreek seeds(optional)
1 tsp mustard seeds
1 tsp cumin seeds
a pinch of hing
Preparation
Cut onion and tomato into small pieces.
Was, peel and cut papaya into 1 inch cubes.
Chop cilantro finely.
Wash and chop fenugreek leaves roughly.

Procedure
Take oil in a thick bottom skillet which is on medium heat. When the oil s hot add chana dal and urad dal followed by fenugreek, mustard, cumin seeds, green chili and hing. Keep stirring until chana dal is getting light brown and mustard seeds are popping. Then add onion. add a pinch of salt and ginger garlic paste. Cover and cook for about 3-4 minutes until the ginger garlic leaves raw smell. Then add tomato and fenugreek leaves. Give a stir, cover and cook for about 2-3 minutes until the tomatoes are soft. After 3 minutes open the lid and notice that tomatoes are little soft. Add turmeric powder and coriander cumin powder. Give a stir. Now add papaya. Add some salt also. Cover them and cook for about 5-7 minutes until the papaya is soft. You may add some water if you need. When the papaya looks translucent you know that it is cooked. Add cilantro and 1 tsp of ghee. Mix it well. Serve it hot with  whole grain rice or chapati.
Helpful Tips
Fenugreek leaves need to be washed thoroughly to remove any sand or dirt.

 Fenugreek leaves are packed with vitamins and minerals. They are a good source of iron, calcium, potassium, phosphorous and dietary fibre.
Papaya contains digestive enzymes. So it is good for digestion and upset stomaches. 
Papaya contains flavonoids like beta carotene, lutein and zeaxanthin which act as anti oxidants.
