Ridge gourd Toor dal - Beerakaya Kandi pappu

Ridge gourd with toor dal is very tasty that goes excellent with rice. It is an easy dish that you can make for every day cooking. When you make ridge gourd toor dal do not forget to make menthi majjiga or ginger raita or majjiga pulusu or mukkala pulusu. One of these will make a good combination.
Ingredients
1 cup toor dal
about 3 cups ridge gourd pieces
1/4 tsp turmeric powder
salt for your taste

For tempering
1 tbsp oil
1 tsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
1-2 tsp crushed red chili or 3-4 red chili cut into small pieces
a pinch of hing
a few curry leaves


Preparation
Wash and soak toor dal in water for 30 minutes.
Cut ridge gourd into small pieces.

Procedure
Take the soaked toor dal into a thick bottom pan and add water just little above the dal level. Turn on the heat to medium. cook dal for about 5-7 minutes until it is half cooked. Then add ridge gourd pieces and about 1/4 cup of water. Give a stir, cover it and cook for about 5-10 minutes until the dal and ridge gourd are cooked. There shouldn't be any rawness inside the dal and at the same time it should retain its shape. You may check if it needs some water. If dry it sticks to the bottom. So add little water as needed. When it is cooked turn of the stove and leave it covered for 5 minutes. If there is anything sticks to the bottom it will get loosen up.
Tempering
Keep a skillet on medium flame with oil. When the oil is hot add urad dal, mustard seeds and cumin seeds. Keep stirring. When the mustard seeds are spluttering add crushed red chili, hing/asafoetida and curry leaves. Now add cooked dal and ridge gourd. Give a stir. Add turmeric powder and salt mix it well. Keep stirring for one more minute to take away the moisture. Enjoy with rice and ghee.

Helpful Tips
Do not peel ridge gourd as it is good fiber. You may peel the hard portion at the ridges.
This dal is a dry variety. So you can make any pulusu like majjiga pulusu, mukkala pulusu or pumpkin pulusu. Any raita like ginger raita, menti majjiga or tomato raita. Any of these will make a great combination with ridge gourd toor dal.


Health Information
Ridge gourd/beerakaya/turai is full of fibre and vitamin C. It prevents constipation and lowers blood sugar levels.
Toor dal is a good source of protein.
