Roasted Plantain Curry is a simple and tasty curry for everyday cooking. By roasting the plantains, they get a nice smokey flavor.
Ingredients
4 small plantains or 2 big plantains
some chopped cilantro
salt to taste
2 tbsp of oil
1 tbsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
3 red chilies
a big pinch of hing/asafoetida
few curry leaves
Preparation
Roast the plantains directly on your stove top on a low or medium flame.
Keep turning to all sides. When they are roasted completely, switch off the flame and let them cool down. Peel the skin off when they are cooled down. Cut them into small pieces or crumble with your hand.
Cut the red chili into small pieces.
Chop cilantro finely.
Procedure
Heat 2 tbsp of oil in a thick bottom skillet.
When the oil is hot, add urad dal, mustard seeds and cumin seeds.
Keep stirring.
When the mustard seeds are spluttering, add crushed red chilli, hing/asafoetida and curry leaves.
Keep stirring and add the roasted and cut plantain and give a good stir.
Add turmeric powder and salt. Keep mixing and add cilantro also.
Roasted Plantain Curry is ready and it goes well with whole grain brown rice.
