Sesame laddu or Nuvu pappu undalu is a Sankranthi special recipe. It is a guilt free snack or a sweet. Sesame seeds are rich in protein.
Ingredients
1 cup of sesame seeds
1/2 to 3/4 cup jaggery
1 tsp ghee (optional)
1 cup of sesame seeds

Preparation
Dry roast sesame seeds in a thick bottom pan on low medium heat. Roast them until they are popping up and ready to change color. When they are about to change color switch off the flame immediately and transfer them into another bowl.
Grate or powder the jaggery and measure it out.

Procedure
In a thick bottom pan take 1 tsp of ghee and melt it. To this ghee add jaggery. If you are a vegan or if you want to avoid ghee, add 2 tbsp of water instead of ghee. Heat it on low medium flame to make jaggery syrup. Keep a bowl of water ready to test the syrup consistency. Put a few drops of syrup in the bowl of water, If it forms into a soft ball consistency, your syrup is ready. But I took it a little bit further into a slightly hard ball consistency. When you get your desired syrup consistency, quickly switch off the flame. Add sesame seeds to syrup and mix it well.
Wet your palm with little water, and take a small portion of mixture into your hand and make a round ball which we call it a laddu. Do not try to make a perfect round at this point because the mixture is still very hot. Just press it slightly and put it aside. When the laddus are little cooled down, press them into a perfect round ball or laddu. You will have to finish it before they get cold completely.
If you make the syrup in soft ball consistency, the laddus are going to be little chewy. If the syrup gets into slightly hard ball consistency, the laddu is going to be crispy. The taste is going to be excellent anyway. Enjoy the healthy snack.
