Spicy Black eyed beans-Chat pata Lobia-Sundal with Bobbarlu

Spicy black eyed beans are very good for not only tea time snack but also for lunch box. You may also call it as Sundal. You can offer this dish to God as a naivedyam.
Ingredients
1 cup black eye beans/Lobia/Bobbarlu
2 tbsp grated coconut
2 tbsp finely chopped cilantro/coriander leaves
1/2 small lemon or lime
1/4 tsp turmeric
salt to taste
For tempering
1 tbsp oil or ghee
1 tsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
3 small green chilies
2 red chilies
a pinch of hing/asafoetida
few curry leaves


Preparation
Soak black eye beans in water for about 4-5 hours.
Chop cilantro finely. Cut green chili lengthwise.

Procedure
Heat the pan with ghee. When the ghee is hot add uraddal, mustard seeds and cumin seeds. Keep stirring. When the mustard seeds are spluttering, add green chili and then red chili by cutting into small pieces.  Add hing and curry leaves.Again give it a stir. Then add soaked lobia or black eye peas/beans. Mix them well. Add turmeric and salt. Stir it again. Add 2-3 tbsp of water. Cook it covered in the low flame for about 10 minutes.

After 10 minutes check the beans for doneness. The beans should crush between your fingers when you press. If not continue for 3-5 minutes. If you want your beans too soft, you should cook them in the pressure cooker for 2 whistles. When the beans are done, add grated coconut and cilantro. Mix them well. Check if the salt is enough. If not you may add now. Switch off the flame. Squeeze some fresh lemon juice. It is optional though. Enjoy them and don't forget to give me your feedback.
