Sundal -Spiced chick peas

Sundal is made out of chick peas or whole chana. It is full of protein and fibre.
It is a weight loss and a diabetic recipe.
Ingredients
1 cup of whole Chana.
2 tbsp of grated coconut. It can be fresh, frozen or dry. But not sweetened.
Some chopped cilantro or coriander leaves.
Some salt for your taste.
1/4 tsp turmeric powder

For tempering
2 tsp of oil
1 tsp urad dal
1/2 tsp of mustard seeds
1/2 tsp of cumin seeds
2 red chilies
a pinch of hing
a few curry leaves

Preparation
Wash whole Chana thoroughly.
Soak whole Chana in water for about 2 hours.
Then boil them until they are soft in the pressure cooker or on stove top and drain the water. Do not over cook.
Get the coconut ready.
If you are using fresh coconut, grate it with a cheese grater or in the food processor.
If you are using a frozen one, take out from the freezer.
Cut the red chili into small pieces.
Procedure
Put a sauce pan on the stove top with oil.
Heat the oil on medium heat.
When the oil is hot add urad dal followed by mustard and cumin seeds.
When the mustard seeds start spluttering add red chili.
Add hing and curry leaves.
Then add the cooked Chana.
Add some salt and turmeric powder to it.
Give a stir.
Add coconut and saute for a minute until the coconut mixes with chana.
Add cilantro and give a mix.
Serve it hot or warm.

Helpful Tips
Do not over cook chana.
It can be offered to God as Naivedyam also.

Health Information
Chick peas or whole chana is a good source of protein and fiber.
Since it contains less carbohydrate it makes a good weight loss and diabetic recipe.
Chickpeas also contain good amount of vitamins and minerals.
