1/2 tsp roasted cumin powder

Preparation
Take out the pumpkin seeds from pumpkin and wash them thoroughly under tap water to get rid of the stickiness. Let them dry on a kitchen towel. Divide them into 2 parts.
Take a baking sheet and apply some oil.
Preheat the oven to 350F.
Procedure
Oven Method
Take one part of the pumpkin seeds in a pan and apply some olive oil, red chili, roasted cumin and salt. Mix them well until they are well coated. Spread them on a single layer on the baking sheet.
Put it in the preheated oven and check in 5 minutes.
After 5 minutes pull them out of the oven and give a stir, spread again and put it back in the oven.
Bake them until they are golden color. It takes about 10-12 minutes.
Transfer them into a bowl to prevent further baking in the hot pan.
Stove Top Method
Take the other half of the pumpkin seeds in a cast iron or any other thick bottom pan on the stove top and turn on the stove.
Put it in high flame for three minutes until the pan is hot and then reduce it to medium or low medium.
Keep stirring until they are golden brown.
It takes about 10-15 minutes.
Turn off the stove.
Then add ghee or olive oil, cinnamon powder and brown sugar.
Give a good mix. The ghee helps to coat them evenly.
Transfer them into another bowl.
Enjoy the crunchy sweet and spicy pumpkin seeds on the salad or just as a snack.
They can be stored in an air tight container for 2-3 weeks.
