Sweet Pongal with Wheat Rava - Diabetic Option

1/12/2016

Wheat rava pongal is a festive variety dish. It is made out of wheat rava, moong dal, jaggery, nuts and raisins and on top of everything it is flavored with ghee. However I shared some of the diabetic substitutes for sugar in this recipe. please tell me what you think about them.
Ingredients
1/2 cup of wheat rava
1/2 cup moong dal
1/2 cup milk
1/2 cup jaggery (Use stevia for diabetics)
3 tbsp ghee
some cashews and raisins
3-4 cardamoms
Preparation
Dry roast wheat rava and moong dal until you smell a nice aroma. Rinse them after dry roasting. Add 3 cups of water and cook them on the pressure cooker.
Coarsely powder the cardamom seeds. Crush or grate the jaggery.
Procedure
In a thick bottom vessel take 2 tbsp of ghee and heat it on medium heat. Fry cashews and raisins until they turn golden color. Keep them aside. In the remaining ghee add the cooked wheat rava and moong dal. Give it a good stir. Add 1/2 cup of milk (optional) and cook for a couple of minutes. Then add cardamom powder and switch off the flame. Add 1/2 cup or little less of jaggery. I added 1/4 cup of jaggery and a little stevia to reduce the sugar. Give a good mix. Add fried cashews and raisins and a table spoon of ghee. Mix it well and enjoy hot or at room temperature.
