High fibre, high mineral and high anti oxidant Thotakura or Amaranth is good for weight loss. Do not think that it is a cheap vegetable that only cattle should eat. It is an excellent green for humans too.

Ingredients
A big bunch of amaranth or thota kura.
1/2 a cup of moong dal
1 onion
A lemon size tamarind
2 tsp of jaggery or brown sugar or a tiny pinch of stevia.
salt
turmeric powder
For tempering
1 tbsp oil or ghee
1/4 tsp fenugreek seeds
1 tsp mustard seeds
1 tsp cumin seeds
3-4 red chili or 1 tsp crushed red pepper
hing or asafoetida
garlic (optional)
curry leaves
cilantro
Preparation
Wash and soak moong dal.
Wash Amaranth thoroughly and cut it finely.
Cut onion into small pieces.
Cut cilantro finely.
Soak tamarind in water.
Cut garlic into small pieces.
Procedure
Put a sauce pan or a vessel on stove top.
Take soaked moong dal, onion and cut amaranth into the vessel.
Add some water to it.
Add some salt and turmeric powder.
Cover and let it cook on medium flame for a few minutes.
After about 5 minutes open the lid and give a stir.
Squeeze out the juice from tamarind and add it to amaranth.
Continue adding more water to tamarind and squeeze out all the juice.
Add some stevia, jaggery or brown sugar.
Give it a stir.
Tempering
Take oil in a small sauce pan. Heat it up on medium heat.
When the oil is hot add fenugreek seeds followed by mustard and cumin seeds.
Then add garlic
When the mustard seeds are spluttering add red chili, hing and curry leaves.
Add this tempering to Amaranth Pulusu.
Continue cooking on low flame for about 10 minutes.
Then add cilantro or coriander leaves and top it with 1 tsp ghee.
Serve it hot with whole grain rice.
