Tomato rice is an easy preparation for potluck dinners. It is a variety rice for lunch box too.
Ingredients
3 cups of basmati rice
4&1/2 cups of water
1 inion
2-3 green chilies (more for more spiciness)
5 juicy tomatoes
handful of mint/pudina
handful of cilantro/coriander leaves
2 tsp of ginger garlic paste
1 tsp of cumin seeds
1/4 tsp turmeric powder
1/2 tsp red chili powder (for more spiciness add more accordingly)
1 tsp coriander cumin powder
1 tsp garam masala powder
sea salt for your taste
1-2 tsp extra ghee for topping

Preparation
Cut onion and green chili lengthwise.
Wash and cut tomatoes into small pieces.
Wash and chop mint leaves roughly.
Wash and chop cilantro/coriander leaves finely.
Wash basmati rice and measure the required amount of water and soak in that water for about 15 minutes.

Procedure
Take oil or ghee in a pan and heat it up. Add cumin seeds when the oil is hot.
Let the cumin seeds crackle and then add onion and green chili. Add a pinch of salt and stir it once. Add ginger garlic paste and mix it well. Cover and cook for 2-3 minutes until the ginger garlic leaves the raw smell.
Check after 2-3 minutes. Add cut tomatoes and stir it once. Add turmeric powder, red chili powder, coriander cumin powder, garam masala powder and sea salt. Mix them well so that the spice powders will get incorporated with tomatoes and onions. If it looks dry add a little bit of water. Cover it and cook for 4-5 minutes until the tomatoes are soft.
After 4-5 minutes check it once and add mint leaves. Now take this gravy and rice along with water into your rice cooker. Mix them well and adjust the salt. Turn on the cooker.
When the cooker came to stop, add cilantro and 1-2 tsp of ghee and mix the rice gently. Do not crush the rice. Adding ghee will enhance the taste of tomato rice. Serve it hot with your favorite raita. Enjoy it and don't forget to to give me your feed back.
