Enjoy the Tomato Soup for a mouth full of taste. It is vegan and gluten free. It is good for weight loss.
Ingredients
3 small Tomatoes
1 cup red bell pepper
1/2 cup carrot
1/2 cup onion
Some cilantro or coriander leaves
4 garlic cloves
1 tbsp butter. For vegans olive oil
1 tsp of cumin seeds
1/2 -1 tsp black pepper powder( You may use red cili powder if you like).
1 tsp jaggery powder r a small pinch of stevia
1/4 tsp turmeric powder.
4 tbsp coconut milk( You may use heavy cream.).
For garnishing:1/2 tsp roasted cumin powder and 2 tbsp of coconut milk.
Salt to taste.
2 cups of water.

Preparation
Wash and cut tomatoes, carrot, bell pepper and onions into small pieces.
Chop garlic into small pieces.
Wash cilantro and cut.
Procedure
Keep a sauce pan on medium heat.
Add half of the butter and let it melt. Vegan friends may use olive oil.
Add cumin seeds and let them fry.
Then add garlic and fry until golden brown.
Then add onion and carrot. Give a stir.
Now add red bell pepper and fry for a minute.
Add tomatoes and cilantro and give a mix.
To the veggies add turmeric powder, black pepper powder, salt and stevia.
Add some water and mix every thing well and let it cook without covering.
After about 5-10 minutes notice that every thing cooked well.
Turn off the flame.
Let t cool down.
When it is cooled down, blend it into a puree.
Again put a sauce pan on medium heat and melt the second half of the butter.
Add the puree to the pan after the butter has melted.
Add salt and pepper powder if needed.
Bring it to a boil. Do not over boil.
When it comes to a boil, add coconut milk and stir it well.
Turn off the flame.
Take the soup into serving bowls and drizzle some coconut milk and sprinkle some roasted cumin powder.
