Traditionally Vada Pappu is made on festivals like Sree Rama Navami and Vara Lakshmi Vratham to offer God or Goddess as Neivedyam. But it can be made anytime as a healthy snack. This Moong dal Salad (Vada Pappu) is very protein rich and fiber rich. This is perfect for your fasting days.
Ingredients
1 cup Moong dal
1/2 cup grated Carrot
1/2 cup grated coconut(fresh or frozen)
2 tbsp chopped cilantro
1/2 tsp red chili powder
1 tbsp freshly squeezed lemon juice
1/2 tsp Agave nectar
salt for your taste

Preparation
Wash moong dal very well until you see the clear water.
Soak it in fresh water for about an hour.
Grate carrot and coconut.
If you are using frozen coconut, bring it out of the freezer to thaw.
Chop cilantro finely.
Squeeze juice out of fresh lemon. Do not use bottled lemon juice as it contains preservatives.
Procedure
Drain the soaked moong dal. To take away the extra moisture from the moong dal, rub it with a paper napkin. Take the soaked moong dal into a bowl and add all the ingredients one by one. You may increase or decrease the red chili powder, salt, lemon juice and agave nectar for your taste. Vada Pappu/Moong dal salad is ready in just a few minutes. You may serve this as a healthy snack.
