Veggie Quesadilla is a delicious and easy recipe for breakfast, lunch or for lunch box. Make it with whole grain wheat bread.
Ingredients
Whole wheat tortillas
Mozzarella cheese
Butter
3 green chili
3 garlic cloves
Bell pepper what ever color is available(red,green, orange and yellow)
Onion
Carrot(You may leave out carrot if you have red or orange bell pepper)
salt
1 tsp oil
A pinch of turmeric powder
1 tsp Taco seasoning
Preparation
Cut onion and bell pepper into small pieces.
Shred the carrot coarsely.
Chop green chili and garlic finely.

Shred the carrot coarsely.
Chop green chili and garlic finely.
Procedure
Take oil in a sauce pan and keep it on medium flame.
When the oil is hot add green chili and garlic and saute for a minute.
When the garlic is turning light brown add onion & bell pepper. Add some salt and give a stir.
Cover & cook for 2 minutes. Then add carrot & cook for 2 more minutes.
When the vegetables are cooked well, turn off the stove and add taco seasoning.
Mix it well and let it cool down.
Keep a thick pan or tawa on medium flame.
When the pan is hot put a tortilla on it and fry until there are brown spots on the bottom. Then turn it over to the other side.
put some veggie stuffing on one side of the tortilla and put some grated cheese on the top of the veggies.
Cover the other side of the tortilla on the veggies and cheese.
Apply some butter on both sides of the quesadilla and fry until golden color on both sides.
Transfer the crispy quesadilla into a plate and cut into pieces.
Serve it with salsa or guacamole and sour cream.
Helpful Tips
Use whole wheat tortillas instead of white flour or corn tortillas.
Here I am using rectangular tortillas but you may use round or rectangular.

Diary products should be organic to avoid anti biotics, growth hormones and other preservatives.
Organic cheese is good as long as you keep it moderate.
