Anti Oxidant, High fiber, Vitamins and Mineral rich Veggie Salad with easy to prepare instant Homemade dressing.
Ingredients
You may take your choice of vegetables. Here is my list.
Red, yellow and orange bell peppers.
Cucumber
Tomato
Mango
Some cilantro
Red and green lettuce
I took approximately 1 cup of each variety.
1 tbsp of roasted sesame seeds.
For dressing
1 cup of homemade yogurt
1/2 tsp of lemon juice
1/2 tsp or less black pepper powder or finely chopped green chili.
1/2 tsp roasted cumin powder
Some salt
Preparation
Wash all the vegetables and cut them into small pieces.
Roast the sesame seeds on low medium flame until they are swelling and about to change the color. Keep them aside.
Get some yogurt ready for dressing.
Procedure
Take all the vegetables in a big salad bowl.
Add the roasted sesame seeds.
Mix them well with 2 forks or you may toss them.
Dressing
Add cumin powder, pepper powder and salt to the yogurt and squeeze some lemon juice. Beat it nicely with a fork. You can pour the dressing over the salad or you can add just before serving.
