Do not throw away watermelon rind. It also contains nutrients. Make a tasty and spicy chutney with it.
Ingredients
Watermelon rind take your desired quantity.
A handful of cilantro.
Salt for your taste.
About 1/2 tsp turmeric powder
A small lime size tamarind
1 tsp jaggery
For Tempering
1 tbsp of oil or ghee
1 tsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
10 fenugreek seeds
3 red chilies
3 green chilies
3-4 garlic cloves
a pinch of hing
a few curry leaves

Preparation
Soak tamarind in warm water.
Remove the green portion from watermelon rind and cut the white and pink portion very finely.
Chop cilantro finely.
Cut green chili lengthwise and chop garlic roughly.
Procedure
In a small sauce pan take oil and keep on medium heat. When the oil is hot bring the flame down to low medium and add urad dal, fenugreek seeds, mustard and cumin seeds. When the mustard seeds start spluttering add red chili, green chili, garlic, hing and curry leaves. When they all fried well turn off the flame and let it cool down.
Take green chili, red chili, garlic and curry leaves into your blender jar. Add soaked tamarind, jaggery and salt to it and make a fine paste. Add this spice paste to water melon pieces. Add cilantro and turmeric powder also. Mix them well. Give a taste test and add salt or jaggery according to your taste buds. Enjoy watermelon rind chutney with rice or chapati.
