Make a delicious Pumpkin bread with whole wheat and jaggery. Here is my healthy version to try.
Ingredients
2 cups whole wheat flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cardamom
Wet Ingredients
2 cups pumpkin puree
1&1/2 cups jaggery
1/2 cup butter
1 cup yogurt
1/2 cup coconut
2 cups whole wheat flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cardamom

1&1/2 cups jaggery
1/2 cup butter
1 cup yogurt

Preparation
Grate the fresh pumpkin or if you want to use pumpkin puree get it ready.

Grate the fresh coconut or if you are using dry or frozen, get it ready.
Get all the spice powders ready.
Preheat the oven to 350F and grease the baking pan.

Procedure
Combining Dry Ingredients
In a bowl combine wheat flour, salt, baking soda and baking powder. Add all the spice powders also to this. Mix them well and sift them in a sifter or in a sieve so that all the powders will get blended in the wheat flour. Keep this aside.
Combining Wet Ingredients
Take pumpkin puree, coconut and jaggery into your food processor and run the food processor once. Then add melted butter and yogurt also and run the food processor to mix all the wet ingredients together. Transfer this into another bowl.
To these wet ingredients add dry ingredients slowly little at a time and mix them. When they are well combined transfer this mixture into your baking pan and bake it at 350F for about 50-60 minutes. Depending on the pan you are using it may take anywhere between 50-60 minutes. After 45 minutes keep checking for every 3 minutes for the doneness. Insert a tooth pick or a small knife in the center and if it comes out clean, it is done.
I used silicone baking pan and it took me 55 minutes. I was checking for every 3 minutes after 45 minutes.
