Make your pasta dishes with whole wheat pasta noodles and more vegetables. Adding more vegetables will improve the fiber quantity and lowers GI (Glycemic Index) value.
Ingredients
2 cups of whole wheat pasta.
Take a variety of your favorite vegetables. I took the following. Broccoli, carrot, onion, green, yellow, orange and red bell peppers. You can also use zucchini and cauliflower.
Handful of fresh basil leaves.
5-6 garlic cloves
1 tbsp of dried basil leaves
1 tbsp of red chili flakes
3-4 tbsp of olive oil, but for a change I used organic extra virgin coconut oil in this recipe.
Salt to taste.

Procedure
Cooking Pasta
You don't have to spend a lot of time to cook pasta. Take 2 cups of pasta in a wide pan and add enough water and a little bit of salt. Stir it once, cover and cook on medium flame. Check in between and add some water if necessary. If you can take a bite of pasta easily that means it is cooked well. Continue cooking until it is well done. When it is well cooked add a tbsp of oil over it and mix it. Keep it aside. You may have noticed that I cooked veggies and pasta parallelly on 2 burners.
Note:- Whole wheat paste takes longer to cook than white pasta.
Cooking Vegetables
In a wide pan heat 2 tbsp of oil. When the oil is hot, add chopped garlic and fry them for 30 seconds. Then add dried basil and red chili flakes. Fry them for 30 more seconds and then add broccoli and carrot. Add little salt and stir it. Cook them covered for about 4 minutes. Then add the remaining vegetables like onion and bell peppers. Cook them for 4 more minutes and stir in chopped fresh basil. For more spiciness you may sprinkle some black pepper powder. Add the cooked pasta and toss them well. If you prefer you may add more olive oil over it. Enjoy!!
