Zucchini Curry - Easy and Healthy Recipe

If you are looking for a simple and healthy recipes with Zucchini, here is one. I have a simple recipe with grey zucchini or zucchini squash.

​Ingredients
1/2 of the whole grey zucchini
handful of cilantro
1/4 tsp turmeric powder
salt to taste
1 tbsp oil
1/2 tsp chana dal
1/2 tsp urad dal
1/2 tsp mustard seeds
1/2 tsp cumin seeds
3-4 red chili cut into small pieces
a pinch of hing
few curry leaves

Preparation
Wash and cut the zucchini into small pieces.
Wash and chop cilantro finely.

Procedure
Heat oil in a skillet. When the oil is hot add chana dal, urad dal, mustard seeds and cumin seeds. Keep stirring. When the mustard seeds are spluttering add red chili, hing/asafoetida and curry leaves. Add cut zucchini pieces and give a stir.
Add turmeric powder and salt. Mix it well and cook it for 5-6 minutes on medium to low medium heat until the zucchini pieces are tender. When it is done cooking turn off the heat and mix in cilantro. You may sprinkle little lemon juice if you like. Enjoy with rice or chapati.
