Zucchini Salad / Chutney

Zucchini Salad/Chutney is an easy, quick and delicious salad. You can turn this delicious salad into a chutney by making tempering. If you want to eat it just as a raw food you can otherwise make it into a chutney.
Ingredients
1 medium size zucchini
a handful of finely chopped cilantro
1 or 2 finely chopped  green chilies
2 tbsp of toasted almond pieces 
about 1 tsp of lemon juice or per your taste.
1 tsp or less agave nectar or honey or stevia
salt per your taste
a big pinch of turmeric powder

For Tempering
1 tsp ghee or oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp crushed red chili
a pinch of hing or asafoetida
a few curry leaves.

Preparation
Wash the zucchini very well and without peeling shredded it or grate it with a cheese grater.
Chop the cilantro and green chili finely.
Toast some almonds.


Procedure
Take the shredded zucchini into bowl.
Add chopped cilantro and green chili.
Add toasted almonds and turmeric powder.
Add salt, lemon juice and agave nectar.
Give them a good mix.
This is your raw food salad and enjoy.
If you want to bring the salad into the next level, make little tempering.
Tempering
Keep a small pan on medium heat.
Take 1 tsp ghee into the pan.
When the ghee is hot add mustard seeds and cumin seeds.
When the mustard seeds are spluttering add crushed red chili, hing and curry leaves.
Turn off the stove.
Add the tempering to the chutney.
Enjoy the flavorful zucchini chutney.


Helpful Tips
You may use toasted walnuts or pine nuts instead of almonds.
